Pi Day

This past week was Pi day...
March 14th!

In mathematical terms...Pi = 3.14

March.14th
Get it?

Emmaline went to her art class that day...
but could not fully enjoy her art
because one young man was full of
PIE.

In honor of the annual Pi day
the kids at his school have a tradition:
they bring pies!

This sweet young man
was happily filled with
pie sweets
and could only talk about his sweet day!


You know what's coming next...don't you??

Even though she had never made a pie or attempted a pie crust...
Emmaline was determined to make her Pi day official!

Want to know her secret?

COLD.

Everything must be kept cold.

The recipe:
2 1/4 flour
3/4 teaspoon salt
2/3 cup of shortening
8-10 Tablespoons of water


First, measure out the flour and salt into the bowl.
Next, put that bowl, the shortening and the pastry cutter into the refrigerator.
Keep it all in there until it is chilled...perhaps about 10 minutes.
Meanwhile, fill your liquid measuring cup with water...
and put that into the freezer.

Make up the filling for your pie...

Take out the flour/salt bowl, shortening and pastry cutter from the refrigerator.
Using the pastry cutter, cut the shortening into the flour.
Nice and cold!

Pull out the water cup from the freezer.
Using a Tablespoon, measure out a Tablespoon of water.
Put it into the flour/shortening mixture...but on one side of the bowl.
Use a fork to gently incorporate it into a little bit of the flour.
Keep adding one Tablespoon of water at a time...
until the dough is made.

Divide the dough in half and make into two balls.
I usually wrap each of the balls in wax paper
(not plastic wrap--it will stick)
and put them in the refrigerator to get chilled--about 10 minutes.

When you take out a ball to make a crust...
place it on a lightly floured surface to roll it out.
One tip:
When rolling out the dough...always start in the middle of the dough...
place more pressure on the rolling pin here
and as you roll out to the edge, lessen the pressure.
If you do it this way, the dough is sure to be even throughout.
